Join Michael and Carolina Ellenbogen at The Copper Grouse for a six-course tasting menu, presented by Michelin-starred executive chef, Nicholas Houlbert. Each course has been exquisitely paired with the wines of Joseph Phelps Vineyard, culminating in a rare vertical tasting of INSIGNIA. André S. Reid, of Joseph Phelps Vineyards, will guide guests through each tasting experience, highlighting the nuances of each wine, vineyard, and vintage.

Amuse bouche
Fluke seviche, citrus vinaigrette, finger lime, mango and green papaya

First course
Cromesquis, duck broths & local végétales, fresh herbs

Second course
Cavatelli, crispy porc belly, chorrizo condiment, parmesan émulsion

Third course
Glazed Jerusalem artichoke, goat cheese condiment & smoked mousse

Fourth course
Confit flat iron, local sautéed local mushrooms, truffle sauce

Yusu Jam, Sourdough Bread, Mixed Micro Greens
