The golden swimmers (which taste a lot like baby sardines) are hauled in from the cold, Baltic waters off Latvia before they are smoked and married with locally-sourced Nordic aromatics and organic cold-pressed rapeseed oil. You’re going to want to first try these on a seacuterie board but after that, we recommend grilling some bread in the tin oil, then smearing it with lavender honey-whipped mascarpone, and finishing it with a smattering of sprats and a dusting of sea salt.

Limfjord blue mussels

Smoked in cold pressed rapeseed oil.

In the cold water of the Danish inlet Limfjorden, ‘blåmuslinger’ (blue mussels) grow slow to acquire a particularly fine taste and texture. Most of them are then shipped off to foreign kitchens but some we keep for ourselves. These FANGST mussels have been smoked with beech wood and preserved in cold pressed rapeseed oil.

Brisling No. 4

Baltic Sea sprat - lightly salted and dried. In cold pressed rapeseed oil.

’Brisling’ is a small fish that traditionally was landed in great numbers along the Scandinavian and Baltic coastlines. Here it was prepared by hand and preserved in cans to be sold as a Nordic version of sardine. The brisling from FANGST is our contribution to revive and create a new place for this fine fish as the ‘Nordic sardine’.

Færøsk laks

Faroe Islands Salmon. Flash grilled. In cold pressed rapeseed oil.

Its remote location in the North Atlantic, clear waters, cool steady temperatures, strong currents and protected fjords make the Faroe Islands the perfect place for salmon. Here people have lived off the ocean for centuries and have strong traditions for respecting nature’s resources. This is also reflected in high standards for sustainability in local fish farming. This FANGST salmon has been flash grilled and preserved in cold pressed rapeseed oil.
